After a very long day of work, I came home and had to make dinner. I was craving something a little different but I knew I wanted a salad. After 20 short minutes of effort, I ended up enjoying one of the best salads I've ever made at home. It's so easy and so tasty!
Salad Ingredients:
- Romaine lettuce
- Marinated artichoke hearts (I got spicy ones because I like to live on the edge like that)
- Julienne cut, sundried tomatoes
- Hard salami
- Basil
- Parsley
- Black olives (or you could use Kalamata olives if that's your thing)
- Grilled chicken (I cooked it on the stove with some avocado oil and seasoning)
- Shelled pumpkin seeds
Dressing Ingredients:
- 2/3 cup olive oil
- 1/4 cup of lemon juice
- 1/4 cup of water
- 1 tsp of minced garlic
- 1 tsp of garlic powder
- 1 tsp of honey
- 1 tbsp of dijon mustard
- big sprinkle of Italian seasoning
- little sprinkle of sea salt
- little sprinkle of black pepper
So this recipe is Paleo friendly but if you are not doing Paleo, I think adding some fat free feta cheese would just take this salad to a whole other level. I think next time, I might also try adding in some bacon...yummmooo!
